You’ll find foraged berries, pine-smoked meats, and fermented grains that rarely make it to urban plates. Six years after he caught the culinary world’s attention with the opening of Masque in Mumbai, Prateek Sadhu decided to leave the celebrated restaurant he co-founded and return to the mountains. The chef was born in Baramulla, a small city in Kashmir, and these Himalayan roots are a focus at Naar, the 16-seat hideaway he opened in 2023 in the village of Darwa, in the northern state of Himachal Pradesh. Set within Amaya, an eco-resort and working farm surrounded by 20 acres of hills, the restaurant is built around what Sadhu has identified as the region’s six endemic seasons — winter comes in two distinct waves, and summer does not turn to fall without the monsoon in between. What isn’t sourced from smallholder farmers in the area is grown on-site or foraged and fished in the surrounding wilds. The Naar kitchen is stocked with ingredients diners may not regularly see in other parts of India: yak cheese, river trout, mountain mushrooms, buckwheat and other altitude-adapted grains, plus Himalayan fruits like cold-hardy galgal lemons. More conceptual dishes are balanced with takes on rib-sticking mountain specialties, like the Uttarakhandi wheat noodles called sunderkala, or iklu, a Himachali fry bread smothered with ghee and jaggery."
