Over the past decade or so, our idea of the country house hotel has been redefined by a whole brood of The Pig properties, crafted by Robin and Judy Hutson, which shooed off pretension and creakiness and brought in farm-to-fork food from the kitchen garden - and a sense of fun. But before The Pig, there was Lime Wood, which Robin opened in 2009. It was that rare creature: a country house hotel that felt comfortable in its own skin, with a spa, rooms and food worth travelling for - 25 years later it's still drawing a loyal following. Rooms range from cosy doubles tucked in the eaves of the original building to a secluded lake cabin and forest cottages with woodland-inspired interiors, log fireplaces and leafy views. In the Herb House spa, I wallowed in the hydro pool overlooking the forest before nodding off beneath warm-oil pours and a lavish long-stroke massage. The next morning was one long sun-drenched lie-down in the rooftop herb garden. Full rustic immersion is a stone's throw away in the New Forest National Park, where forager Sammie Longhorn takes guests out on root-arounds among the redwoods, oaks and heath-land. Some of her finds make their way onto the plates at the restaurant, run by Angela Hartnett and Luke Holder, whose menu splices Italian and British recipes. Highlights during my stay included mini arancini, risotto Milanese and Loch Duart salmon cured in the hotel's smokehouse.
