"#20 50BEST - CNT $$$ While some miss the quiet intimacy of Den’s original location (a two-story house in the off-the-beaten-track neighborhood of Jimbocho), no one can resist the convivial charm of its new digs in central Tokyo. “I wanted to create a more family-like atmosphere, where everyone can be together,” says chef-patron Zaiyu Hasegawa of the new location. The open-plan kitchen remains the same, but instead of an eight-seat counter, there’s a long, wooden table that can seat 12—maybe more—as well as a couple of small tables. / Main event: the food. Give us the lowdown—especially what not to miss. Hasegawa's mother was once a geisha, and he pairs his mastery of the Japanese art of hospitality with humorous takes on kaiseki haute cuisine. On a recent visit, diners from the U.K. found a miniature Union Jack inside their box of “Dentucky Fried Chicken,” a crispy chicken wing stuffed with rice and ginko, while a Slovenian guest deciphered a hidden message in her native tongue beneath a dessert of cheese mousse with green tea, charcoal powder, and toasted buckwheat, all served in a shovel. “Something from the garden,” joked maitre d' Noriko Yamaguchi. And how did the front-of-house folks treat you? Expect to be greeted with a hug and walked out at the end of the night by a warm staff that waits until you've turned a corner to go back inside. On one night, Hasegawa’s wife and business partner, the lovely, kimono-clad Emi, poured a selection of delicate sake from all over Japan, which paired especially well with the clay-pot cooked rice topped with salmon roe marinated in dashi. At the end of the night, the restaurant’s real star—Puchi, Jr., the Hasegawas’ pet Chihuahua—appeared from behind the register, clapped his front paws together, and bowed deeply. What’s the real-real on why we’re coming here? Den is quite possibly the best introduction to high-end Japanese cuisine—and hospitality—anyone can hope for."

"Den, Tokyo Humor and kaiseki cuisine don't typically coincide, but at chef Zaiyu Hasegawa's Den, the two have formed the perfect marriage. Approaching this traditional version of a seasonal Japanese tasting menu with a playful and innovative approach, Hasegawa creates a convivial atmosphere for his patrons. For starters, his signature "Dentucky Fried Chicken" features a stuffed chicken wing sitting in a take-out–style box, donning a photo of the chef in a toque hat grinning from ear-to-ear.
