Red Cooked Eggplants by Petit Bao
50ml Light Soy Sauce
25ml Shaoxing wine
25ml dark soy sauce
30g of sugar
20g of cornstarch
400g of eggplants
1g fresh chilli pepper
6g grated ginger
6g grated garlic
1 tablespoon of sesame oil
How to do it ?
Prepare the sauce: mix the light, dark and shaoxing soy sauce, sugar and 5g of cornstarch.
Mix the eggplants with the cornflour and some water.
Fry in the deep fryer for a first cooking.
In the wok, put a drizzle of oil, garlic, ginger, and pour the eggplants.
Add the sauce.
Add the peppers.
Add the sesame oil.
